Elvisem’s EPT enhanced antioxidant EPT-OILShield is a natural, label-friendly antioxidant solution that improves the quality and health profile of oil during frying operations.

During frying operations
  • EPT-OILShield (replaces EVS-OL) significantly reduces both primary (PV) and secondary oxidation products (OFA) during high temperature frying (unlike synthetic antioxidants such as BHA, BHT, PG and TBHQ which are volatile and tend to decompose at high frying temperature)
  • Its antioxidant effect is proportionately more marked over cumulative frying cycles
  • Low concentrations of the product are required to achieve desired outcomes
  • Thanks to the lesser formation of Oxidized Fatty Acids the resulting oil is less rich in oxidized products, and offers a healthier profile

Fried products
  • The effect of the EPT-OILShield is retained in the end product thanks to reduced formation of hexanals
  • Products fried with EPT-OILShield have higher gamma tocopherol levels indicating that EPT-OILShield is helping to inhibit the oxidation of the polyunsaturated fatty acids
